Most of these are butterflied — meaning they're cut thin and opened up so you can cook them as-is for a thinner chop, fold and stuff them for a thicker presentation, or split them into two true thin cuts. Each bag typically contains 3 packages of chops. Fill them with spinach and goat cheese, a mushroom duxelles, or even leftover risotto.
