MEET THE MAKERS

Yair "Leo" Carvajalino & Sally Carvajalino

I'm a third-generation coffee farmer, born and raised on Finca Paramitos in Chinchina, Colombia — my parents and grandparents were coffee farmers before me. I founded Norte Café because I wanted people to know exactly where their coffee comes from and the faces behind every bag. My wife Sally is from Minnesota, has visited the farm multiple times, and has seen firsthand what goes into it. She believed in this enough to become my partner. Today I roast and sell here in the Twin Cities while my dad and cousin tend the farm — about 45,000 trees on 15 acres, at 7,000 feet above sea level where the clouds and cooler temperatures help the beans hold their natural sugars.

Finca Paramitos

The family farm in Chinchina, Colombia sits at 7,000 feet above sea level — where mountain clouds and cool temps let the beans slowly develop their sweetness and complexity.

THREE GENERATIONS

Leo's grandfather farmed coffee until age 94 and lived to 100. His parents carried it forward. That same dedication now lives in every roast Leo produces in Minnesota.

45,000 TREES

The farm runs about 15 cultivated acres with 45,000 coffee trees. A portion of the land is preserved as forest to protect native plants, animals, and birds.

COLOMBIA TO MN

Leo roasts in the Twin Cities while his dad and cousin tend the farm. The supply chain runs entirely within the family — no middlemen, no mystery.

HIGH-ALTITUDE FLAVOR

Growing at elevation slows the ripening process, concentrating the bean's natural sugars. Expect sweetness, fruity notes, spice, and bright acidity in the cup.
